The dough takes two days. The baking takes a minute and a half. Both numbers matter.

Ninety seconds: the flatbread

People ask for the recipe and are disappointed by how short it is. Flour from Moinho Velho, water, salt, and a spoon of yesterday’s dough.

Two days

It sits in the cold room for forty-eight hours. Nothing happens that you can see. Everything that makes it taste of something happens then.

Ninety seconds

The oven floor is at four hundred and fifty degrees. The bread goes in flat and comes out blistered, and it should be eaten before it has finished deflating. That is the reason it arrives at your table on its own, ahead of whatever you ordered with it.

Come hungry. Bring people.
